Funny he didn't mention pork, just beef.. of which the US is the top producer. Only beef, even though meat prices have gone up across the board. We in the US also produce a great deal of pork (#3 in the world) but a good chuck of that business is owned by China and many of those piggy carcasses gets shipped to China as well. China produces 5 times the amount of pork we do. Pork is integral to "prosperity" in China as it is the meat most associated with wealth and holidays. They actually have an emergency strategic "pork reserve" like our strategic oil reserve because pork shortages are seen as a destabilizing factor to the point of possibly causing a revolt and revolution.

Yes I know Vilsack is from Iowa but his own hometown hates him as well as the rest of the state. 20 years ago we farmed and raised beef. Our calves were getting $1.25/lb at the livestock auction. Yesterday's prices were about $1.70/lb for the same size calves that we would sell. In 2000, lean ground beef was about $3/lb, today it is almost $6/lb. Obviously the farmers are getting the price increase, the packers are. Last spring all of the meat lockers were booked up for the year because people were buying direct from the farmers because the packers couldn't / wouldn't take the available cows. This drove prices up even more - again guess who got the money - not the farmers.

Labor shortages plague the meat production industry severely with the COVID benefits the governments (state and federal) are handing out, thought that's starting to tail off now. As someone with years of experience in the industry, labor turnover is always big, but the COVID payments have recipients receiving much more staying home than earning an honest paycheck at work. There are three factors affected (I'm simplifying here)- the live production aspect (where the cattle, swine, and poultry are raised), the production facilities (where live animals are converted to meat protein), and then the market where the consumer purchases the meat protein. A bottleneck at the meat production means that fewer animals can be taken in processing, meaning live numbers increase, pushing down prices to farmers. on the meat production to the consumer aspect, fewer pounds processing output translates to higher prices to consumers. Higher prices at the meat production level isn't necessarily a good thing if the production throughput is insufficient to realize any gain of the higher markets. What gain are 30% higher prices if your plant is running at only 50% capacity? Your fixed costs per pound offset the higher price. Plants would much rather run at 100% constantly than up and down due to labor shortages, as an efficient supply chain is better on costs, markets, and prices. Governments must stop distorting labor markets for its own pandering benefit. And in the case of COVID, the governments' gross overreactions are now being brought to bear upon the meat protein markets.
