Bacon enthusiasts converge

DES MOINES, Iowa- The smell of bacon was in the air Saturday as thousands converged on Iowa´s capital city for an increasingly popular festival celebrating all things connected with the meat. Some people wore Viking hats and others walked around with makeshift snouts for the Blue Ribbon Bacon Festival. The annual event featured more than 10,000 pounds of bacon served in unusual ways, such as chocolate-dipped bacon and bacon-flavored cupcakes and gelato. "I love bacon more than I love my job," said Katie Nordquist, who was dressed in a tuxedo T-shirt that looked like bacon

I de-glaze the chicken liver pan with Madeira when I have it, or sherry when I do not. Boil down to a thick rich oniony sauce.

Sadly, bacon violates my low salt diet--but less than you might think! Depending on the brand, Maple Leaf maple smoked has the same level of sodium in 2 slices than many a single slice of conventional white bread! (Even before buttering!!)

In Waimea Hawaii, at the farmers market, one booth sells BLT´s made by the family of the farmer who grows the pigs and smokes his own bacon. Beautifully lean, meaty, full pork flavor....now back to my kale (sniff!)

Candied Bacon:

1/3 cup light brown sugar
1/2 teaspoon cumin, ground
8 slices bacon

1) Preheat the oven to 400 degrees.
2) Mix the brown sugar and cumin. Dredge each bacon slice on both sides through the sugar mixture.
3) Place the bacon on a baking pan with sides and bake for 15 to 20 minutes, depending on the thickness of your bacon. Place on a paper towel to drain the excess fat.
Enjoy.

The Associated Press and the National Journal have corrected erroneous stories they ran about Senator Ted Cruz (R-TX), misquoting a remark that he made at an anti-abortion rally. On Wednesday at the Susan B. Anthony List “Campaign for Life Gala and Summit,” Cruz reminded his audience that pro-abortion advocates had chanted “Hail to Satan” last year at a rally in Austin Texas. The AP attributed to Cruz a remark that said abortion rights activists were “Satan Worshipers.” The AP article, written by Philip Elliott, was corrected on Thursday and re-printed with Cruz’s actual statement. In one of the thousands of Clinton administration papers released Friday came a hint of what is to come if Hillary Rodham Clinton decides to run for president in 2016. In a January 1996 memo to White House communications director and speechwriter Don Baer, President Clinton´s political advisor Paul Begala wrote that in the upcoming State of the Union address “it’s imperative that the president defend the honor of the first lady tonight, with the whole country watching.” “The Republicans are attacking her without compunction, in part because they know the Democrats are too ... to retaliate,” Begala wrote, including a

Fertility is the missing chapter in sex education. Sobering facts about women’s declining fertility after their 20s are being withheld from ambitious young women, who are propelled along a career track devised for men. The refusal by public schools’ sex-education programs to acknowledge gender differences is betraying both boys and girls. The genders should be separated for sex counseling. It is absurd to avoid the harsh reality that boys have less to lose from casual serial sex than do girls, who risk pregnancy and whose future fertility can be compromised by disease. The three-judge panel — consisting of Carter and Clinton appointees — ruled in favor of the legislators’ standing. This decision should embolden members of Congress who correctly believe that President Obama has encroached upon Congress’ constitutional authority. Indeed, Congress should do no less in defending its authority than the five Colorado state legislators.
